Chocolate Orange Gluten Free Belgium Waffles

This recipe is inspired by a Giada De Laurentiis recipe. One of my favorite things is to look up fun and yummy recipes that I know my family will love, and convert them to GF. This one is always a hit in our house. Plus it makes a good amount of waffles, so you will have plenty of leftovers for a quick breakfast during the week. You would never know these amazing waffles are gluten free……DELICIOUS!

What you will need:

Vegetable cooking spray(I prefer coconut oil spray)

2 large eggs, separated, at room temperature

2 cups unsweetened  almond milk

3 tablespoons sugar(I use coconut sugar)

1 teaspoon pure vanilla extract

3/4 teaspoon pure almond extract(optional)

Zest of 1 medium orange

1 1/2 cups all-purpose gluten-free flour

1/2 cup almond flour

2 teaspoons baking powder

1tsp. xantham gum

1/4 tsp. sea salt

1 stick unsalted butter melted

3/4 cups mini chocolate chips

Special Equipment: Electric waffle iron(I use a belgium iron but you can use a regular one for this recipe too).

Directions:

Spray waffle iron and heat up. Whip egg whites with an electric mixer until soft peaks form and they are thick. about 2 minutes. In a separate bowl combine egg yolks, almond milk, vanilla, almond extract, orange zest, and sugar. Beat until smooth. Add in all dry ingredients, mix until smooth. Do not over mix. Fold in the egg whites gently. Then fold in the melted butter and chocolate chips. Scoop a ladle full into your waffle iron. Cook until golden brown. Enjoy with some mandarin orange slices and pure maple syrup!
