Lettuce Wrapped Turkey Taco’s

MMMMMM…who doesn’t LOVE taco’s? I know I do, but what I don’t love are the extra calories that can come with them. This is my low cal, gluten-free, healthy version of crunchy taco’s! All the same great flavor that you love, without the guilt. Plus you can cook them up in less than 30 minutes, BONUS for all you busy mama’s and papa’s out there!

Here’s what you need: 1/2 lb. ground turkey, 1-2 tbsp. oil(I use coconut), 1/2 onion finely chopped, 1tbsp. cumin, 2 tsp. chili powder, 1/2 tsp. garlic powder, pinch of salt to taste, Romaine lettuce leaves.

Here’s what you do:

In a medium size skillet warm the oil and add in the onions, saute until soft. Add in your ground turkey breaking up any large clumps. Add in the spices and cook until turkey is browned and cooked through. You can cover your pan and allow the turkey to simmer a bit while you prep your lettuce, this will alway the turkey to stay nice and moist.  Wash and dry your lettuce leaves.

The next step is up to you filling your leaves. I like to fill my lettuce taco’s with sliced avo, diced fresh tomatoes, ground turkey meat, grated goats milk cheese, and top it off with some green salsa..yumm-O!
