Now that the days are shorter and the nights colder, a nice warm stew hits the spot perfectly. I love the combination of sweet yams, with the spice of fresh ginger, garlic and onion. This stew is hearty, creamy, has a rich curry flavor AND its made in the CROCK POT….Score!
Here’s what you need:
1lb. ground turkey, 1tbs. coconut oil, 2tbs. fresh ground ginger, 1/2 onion chopped, 2 garlic cloves minced, 2 yams peeled and diced (preferably o.g.), 1 can coconut milk(whole milk), 1/2 cup chicken or veggie stock, 1 can organic diced tomatoes, 1 can organic chick peas, 1 tbs. curry powder, 2 tsp. cumin, salt and pepper to taste.
Here’s what you do:
Warm the coconut oil in a skillet and add in your onion, garlic and ginger. Saute until onions are slightly soft, add in your turkey and brown. While you turkey meat is browning add the remaining ingredients to the crock pot and stir. When the turkey is done browning add it to the crock pot and mix. Cook for 6-8 hours on low.
*Vegan option; you can omit the ground turkey and just cook the onion, garlic and ginger together until onion is soft.
