G.F. Fluffy French Toast

French toast is one of my favorite breakfast treats! Since going GF I have had to longingly look on while others enjoyed my favorite restaraunt brekky! Until now, this gf fluffy french toast recipe is divine and easy to whip up. It is slightly sweet, has a hint of fresh lemon, and a touch of cinnamon. This is breakfast treat is sure to please your whole family and save you a few $$ eating in!

Here’s what you need:

8-12 slices gf bread (I use starry lane bakery fresh bread), 3/4 cup almond milk, 4 eggs, 1tbs. coconut oil, 1tbs. honey,         1 tsp cinnamon, 2tsp. grated lemon rind, 1tsp. vanilla extract, pinch salt

Here’s what you do:

Place all ingredients into your blender (I have a blendtec blender which has a batter setting, but I think any blender will work). Bend up your batter until fluffy in consistency. Pour batter into a pie pan, or any dish that you can soak your bread in. Soak a few slices of bread (if using store-bought bread give it a few more minutes to soak). Warm a skillet and coat with oil or butter. Place your soaked bread in the skillet and cook until golden brown on each side.

I topped my toast with some powdered sugar, a little dollop of coconut whipped cream and some blueberries…DELICIOUS!

*Other flavor options – Almond orange; replace lemon rind with orange and add in 1/2 tsp almond extract.

One note: I buy my gf bread fresh from a local bakery here in San Diego. It is very moist compared to the gf bread you might get in the stores. If you are using store-bought gf bread, soak it a bit longer so it can absorb some more moisture from the batter.
