Nothing says fall more than the smell of fresh apples and cinnamon baking in the oven!
Apple Pie A-LA-MODE use to be my go to desert. The sweet tartness of the apples mixed with the butteryness of the crust topped with creamy vanilla ice cream…YUM. I just HAD to come up with my own cleaned up version of this fall favorite to satisfy my cravings! I know that you and your family will love it just as much as we do!
To start here are a few tips to help you get prepared:
*Make sure you get fresh granny smith apples or pink lady apples and ALWAYS GET ORGANIC!
*Before making your coconut whipped cream place your can of coconut cream or coconut whole milk in the refrigerator. This allows the fat to separate from the water(essential for good whipped cream). Now your ready to get baking!
Paleo Apple Crisp w/ Coconut Whipped Cream
Ingredients
- 5 large or 6-7 small apples, thinly sliced
- juice from 1/2 of a lemon
- zest of 1 lemon
- 1 teaspoon cinnamon
- 2 Tablespoons of honey or maple syrup
Topping
- 1/4 cup melted, grass-fed butter (e.g. Kerrygold) or melted coconut oil
- 1 cup shredded coconut (unsweetened)
- 1/2 cup almond flour
- 1/4 cup chopped pecans or walnuts
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- pinch of sea salt
- 3 Tablespoons of honey or maple syrup
Directions
Preheat oven to 350°. Peel & slice the apples thinly and mix in a bowl with lemon juice, zest, honey or maple syrup, and cinnamon. Mix together all of the topping ingredients until it forms a loose dough like consistency. Arrange the apple mixture in a 2 quart baking dish, shallow pie plate, or 8”x8” pan. Sprinkle topping evenly over the apples. Bake for 35 – 45 minutes, until the topping is browned and crispy but not burned. Serve warm with whipped coconut cream.
Whipped Coconut Cream
Ingredients
- 1 can whole milk coconut or coconut cream
- 2 tbsp. coconut sugar
- 1-2 tsp. vanilla extract
- pinch of sea salt
Directions
Place coconut cream in a bowl with all ingredient. Whip on high with an electric mixer until whipped cream forms. NOTE: if you get to much of the water in the cream it will not whip up as well.
