Heart Healthy Protein Oatmeal

Nothing warms the heart quite like a comforting bowl of nourishing oatmeal. In the spring and summer I am a big fan of overnight oats. But on these colder winter mornings my body craves warmth. These oats are loaded with heart healthy ingredients that are equally delicious. Plus with a little boost of protein, they will keep you full all morning long!


Hearty Healthy Protein Oatmeal (serves 4)


1c almond milk, 1c water, 1c gluten free oats, 3tbs. coconut sugar, 1tsp maca powder, 1/2 tsp almond extract, 2tbs. almond butter, 1c organic fresh or frozen blueberries, small handful of chopped walnuts to top or slivered almonds.


In a large saucepan add the milk, water, sugar, maca & extract. Whisk to combine, set heat to medium high and bring to a slow boil. Once boiling add in the oatmeal and cook for about 10 minutes or according to package instructions. Once cooked add in your almond butter and blueberries, stirring gently. Serve and top with nuts if desired.
